Welcome to NaturallyIndulgent by Kate. I (finally) started this blog in December 2016, after much thought, as a way of documenting my journey and love of food over the last 8 years which has grown as a result of managing and healing from an autoimmune disease: Endometriosis. When I first thought about starting a blog five years ago after studying in Brussels, I didn’t know where to start or if it would even be helpful.
Eating a healthy and balanced diet with a variety of ingredients is not only good for your body, but also your mind. When I changed my diet back in early 2009 to introduce more variety of healthy foods, it became my lifestyle and routine. Eating out and cooking became more interesting, delicious and I discovered real food with nutritional value. You can enjoy this with friends and family too.
When I started eating this way, I wanted to adapt my current meals but also experiment with new meals that were not only delicious but simple and affordable to make, and full of nutrition. Basically, going back to basics and eating real food, just like our grandparents did. As a university student living on a budget, this was challenging but certainly doable. Working and commuting also presents its challenges but with a positive outlook, you can achieve more than you think.
I truly believe that food is medicine and balance is key.
